Ingredients
1 serving 1 scrambled egg+1 scrambed egg white (reg egg+white) .35 tbsp Bacon Bits - Hormel Lite Real Bacon Bits .25 cup (not packed) Cottage Cheese, 2% Milkfat 1 cup Baby Spinach - Fresh Express (bagged) 1 small whole (2-2/5" dia) Tomatoes, red, ripe, raw, year round average
Directions
spray small sauce pan with olive oil
mix one egg, one egg white, spinach, cottage cheese and bacon bits together in a small bowl
pour mixture into sauce pan on medium heat
cook until done
slice one small tomato
place eggs on a small plate, w/tomatoes, enjoy
