4.0 breast, bone removed Chicken Breast, with skin2.0 cup, chopped or diced Broccoli, fresh0.25 cup Red Onion Raw (1/4 cup, 40g or 1.4oz)6.0 oz Tomato, grape (3oz = appro 12 tomatoes)2.0 clove Garlic4.0 tbsp Extra Virgin Olive Oil2.0 tbsp Salt1.0 tsp Pepper, black
Preheat oven to 450 degrees F. Line baking sheet with aluminum foil.
Cut chicken into 1 inch pieces.
Cut tomatoes in half.
Combine all ingredients in a bowl and mix well. Bake on pan in oven for 25 minutes or until chicken is done.
Optional: serve with rice.
