Erish Potato Leek Soup

Ingredients
3 tbsp butter3 leeks, rinsed, sliced5 med potatoes, peeled and diced3 cans broth
Directions
In large pot, saute sliced leeks in butter until tender. Add broth and diced potatoes. Cook over medium heat until potatoes are tender.
Blend most of soup with blender or stick blender (I like a few chunks).
Can be served hot or cold.
