Ingredients

12 fresh, live oysters
1 cup of cooked spinach (6-8 cups of fresh)
4-6 oz white American cheese
12 tsp of crumbled bacon (or 3 slices of cooked crispy bacon, chopped)
Directions
Makes two servings, 6 oyster each.
Heat up the broiler in your oven.
Boil some water in pot, add fresh spinach and cook until it is wilted for 1-2 minutes. Drain the hot water and put the cooked spinach in icy water. Drain it again.
Cook bacon and chop it in small pieces or crumble with your fingers.
Open oysters with a special knife. To make it easier just put oysters in the hot oven for 3-4 minutes. Arrange them on a baking sheet.
Cut the cheese in big pieces.
Put the cooked spinach on top of each oyster, then cheese, then sprinkle with bacon.
Put the oysters under the broiler and cook for 2-3 minutes till the cheese melts. Keep your eyes on it constantly so you don't burn bacon.
Serve immediately.
