Avgolemono Chicken Soup

1 chicken breast skin removed2 chicken thighs1 cup white rice, short grain1 tea spoon margarine or butter unsalted1 large egg Lemon juice from 1 large lemon12 cups water1/2 tbsp saltBlack pepper 1 pinch
In a large pot boil chicken breast and thighs
with 12 cups of water on medium heat until
meat is tender. Remove chicken from broth.
Add rice, butter, salt and pepper and cook for 15 minutes. Rice must be tender. Cut chicken into bite size pieces and return to pot.
In the meantime in a large bowl beat egg adding slowly the lemon juice. Use a ladle to add 4-5 cups of hot broth in the bowl with egg - lemon mixture. Return the whole mixture to pot and remove from heat.
Makes 6-7, 2-cup servings.
