Gluten Free Lemon Bars

Ingredients
1 cup Bob's Red Mill Gluten Free 1 to 1 Baking Flour (by DEX82DAX) .5 cup Butter, salted 1 cup Granulated Sugar 2 large Egg, fresh, whole, raw 6 tsp Lemon Juice 'Real Lemon' 100% juice 1 tsp Lemon Peel .25 tsp Baking Powder
Directions
Preheat oven to 350 F In a bowl combine 1 C flour, 1/2 C softened butter, and 1/4c sugar, mix on low speed scraping the bowl often until mixture looks like course crumbs. Then place into an 8x8 ungreased baking pan, press it into the pan to form the crust. Bake 15-20 min till edges are lightly brown. While crust is baking combine in a bowl the remaining 3/4c sugar, 1/4tsp baking powder, 2 eggs, 3Tbl lemon juice, and 1 tsp lemon zest. mix well on a low speed, scraping the bowl often. When crust is done remove from oven and pour in the filling . Return to the oven for another 18-20 min, or until set. Remove and sprinkle with powered sugar.
