Pasta Caprese

1 cup of small mozza balls (Boccocini)2 cups of shelled pasta equal in size to mozza1 cup of diced roma tomatoes equal in size to mozza1/4 cup of Extra virgin olive oil1 shallot8-10 leaves of fresh basil
Makes 8 servings:
1. Place mozzarella balls in freezer for 10 minutes. Continue with step two during this time.
2. Cook shell pasta until done. Pasta, mozza, and tomatoes should all be equal sizes.
3. Finely dice shallot and place in large bowl with extra virgin olive oil.
4. Place cooked pasta into oil/shallot mixture.
5. Place cold mozza in bowl with warm pasta.
6. Roughly chop fresh basil and place into bowl and mix so that everything is coated with oil.
7. Put remaining basil on plated pasta as a garnish.
