Adzuki Bean Brownies

1 1/2 Cups Adzuki Beans1/2 Cup Semi-Sweet Chocolate Chips1/3 Cup Splenda or similar no calorie sweetener2 Large Eggs1 tsp Baking Powder1/8 tsp Salt2 Tbsp Extra Virgin Olive Oil1/3 Cup Unsweetened Cocoa Powder1 tsp Artificial Vanilla ExtractReserve 1/2 Cup Milk Chocolate Chips (optional)Cooking Spray (optional)
1. Soak the Adzuki Beans overnight.
2. Drain the Adzuki Beans.
3. Preheat the oven to 350 F.
4. Add all the ingredients into a food processor; process until smooth.
5. Spray a 9 X 9 baking pan with the cooking spray (or line with parchment paper if preferred).
6. Spread the mixture into the prepared baking pan and sprinkle with the reserved chocolate chips, if desired.
7. Bake on the middle rack for 40 minutes (or until a toothpick inserted in the centre comes out clean).
8. Cool the brownies in the pan for 10 minutes to allow them to set before cutting.
