500 grams frozen green peas, about 1 pound4 cups veggie or chicken boullion, or more depending on consistency you want2 stalks celery1 medium onion, choppedsalt and pepper to taste
Makes 4 big servings, serve cool or hot and leave out the mint.
Spray some Pam in the bottom of a big soup pot and add the chopped onions and celery. Sweat until limp.
Add the peas and bouillon, cook about 20 minutes. Whizz up to the consistency you want, add more boullion or water if necessary. Salt and pepper to taste, chill and eat cool with a sprig of mint.
