28oz pork sausage (or half pork half ground beef)28oz can diced tomatoes, juice reserved2 tbsp Olive Oil 3 cloves Garlic 1 medium diced1 cup, chopped Scallions6 large green bell peppers2 cups Great Value" Cheese, Fiesta Blend 1 tsp Oregano, leaves 1 tsp Basil leaves dried 1/2 cup water
Cut peppers in half, dice one into small pieces and set aside
Heat pan with olive oil over medium. Add garlic, onions, scallions, diced pepper, and pork sausage and cook until sausage is done.
Add tomatoes and spices cook 3-5 minutes.
Spoon mixture into pepper halves and top with cheese.
Mix tomato juice from Can with water and pour into bottom of baking dish.
Bake at 375 for 30-35 minutes
