Easy Low-Carb Fudge Popsicles

1 3/4 cp Heavy Whipping Cream 3/4 cp Almond Milk (Unsweetened)1/3 cp granulated Erythritol6 tsp Sucralose (like Splenda) 2 large Egg1 tsp Vanilla Extract 2 1/2 oz. unsweetened chocolate
1. In a 1 1/2 quart saucepan, whisk together the heavy cream, unsweetened baking chocolate, granulated erythritol, almond milk, sucralose and eggs.
2. Place saucepan containing the mixture over medium low heat. Whisking continuously, heat mixture until it just comes to a simmer. Remove from heat immediately.
3. Whisk in vanilla extract. Pour into popsicle molds, cover, and insert popsicle sticks. Freeze until completely frozen (about 5 hours).
Serving Size: makes 12 fudgsicles
