Ingredients
3.0 small (1-3/4" to 2-1/2" dia.) Potato, raw3.0 plum tomato Red Ripe Tomatoes1.0 cup Lima Beans1.0 cup Chickpeas (garbanzo beans)1.0 ear, medium (6-3/4" to 7-1/2" long) yields Sweet Corn, Fresh4.0 cup (8 fl oz) Chicken Broth or Bouillon0.33 medium (2-1/2" dia) Onions, raw3.0 clove Garlic3.0 small (5-1/2" long) Carrots, raw0.5 cup Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry
Directions
Add broth to slow cooker. Chop veggies. Sauté onions and garlic, then add to broth. Add rest of veggies and beans to broth. Cook on high for 4 hours or low for 8. Add quinoa in last 30 minutes. Serve warm.
