Red Beans and Rice

Ingredients
2 cups TVP1 3/4 boiling water1 large onion, chopped6 cloves garlic, mashed2 cups red kidney or pinto beans, undrained3 tbsp. chili powder1 tablespoon cumin2 cups cooked brown rice, (basmati or short grain)
Directions
Rehydrate TVP with 1 3/4 cup boiling water. Saute onion and garlic, with spray oil, until tender. Simmer veggies with TVP, beans (undrained) and spices. Prepare brown rice according to package directions. Mix the cooked rice and beans, taste, add a pinch of cayenne or hot sauce if desired. (green tabasco is the best!)

    I'm very curious what TVP is also... found several recipes that call for it, and when you're only beginning to go vegetarian, all these things are confusing... this sounds great, though, and I really want to try it. - 3/13/09

    I made this last night and we loved it. Only difference in mine was I sauteed the onions with a little olive oil.
