Ratatouille

Ingredients
1 small chopped onion3 cloves garlic, chopped1 green (or red, or yellow) pepper, chopped1 small zucchini, chopped1 small eggplant, chopped1 cup chopped cooked cabbage1/4 cup dry red wine1 6oz can tomato pastesalt and pepper to taste
Directions
Saute onion and garlic until soft. Add peppers and saute about 5 minutes. Add eggplant, zucchini and red wine. Simmer about 10 minutes. Add tomato paste and cabbage. Simmer on low heat 15 to 20 minutes to blend flavours. Salt and pepper to taste.
Makes 3 to 4 servings.
