Gourmet Burgers

4 lean hamburger or turkey burger patties4 whole grain burger buns3 tbsp olive oil2 cups of mushrooms, sliced1 cup of sliced red onion4 tbsp balsamic vinegar3 tsp sugar4 oz crumbled blue cheese (I use reduced fat)4 slices of bacon, or substitue tukey bacon, cut in half
1. Heat olive oil in medium skillet
2. saute onions and mushrooms, adding balsamic vinegar and sugar while stirring. Cook 15-20 minutes until vinegar evaporates and veggies are soft.
3. While veggies are cooking, cook burgers on grill to desired doneness.
4. Top each cooked burger with 1/4 of mushroom mixture, 1 oz of blue cheese crumbles and 2 slices of the cut bacon (= one slice total per burger)
