Quinoa Breakfast Bites

1 cup Nature's Earthly Choice Quinoa - 1/4 cup dry 1/2 cup cooked 2 oz Cheddar Cheese 2 large Egg, fresh, whole, raw 1 serving Green Onion (fresh-1 stalk) 0.25 medium Zucchini, baby Seasonings to tasteOther chopped veges as desired
Cook quinoa ahead and let cool. Grate zucchini and cheese. Add all to quinoa and mix thoroughly. You can either grease a muffin tin or use parchment muffin paper. Bake at 350 deg on centre rack for 15-20 minutes. To freeze, lay out on a cookie sheet and place in freezer until just frozen enough to not stick together, then place in a freezer bag or container in the freezer. Note: use any vegetable and seasoning options. Chili flakes are nice. I deliberately omitted these variations to stay flexible.
