Ingredients
1/3 cup sour cream1/3 cup light mayonnaise4 tsp lemon juice1 tsp salt1/4 tsp pepper3 cups cubed cooked chicken4 celery stalks, sliced thin1 cup fresh mushrooms,chopped1/4 cup chopped green pepper1/4 cup chopped sweet red pepper4 strips cooked and crumbled turkey bacon1/2 cup chopped pecans, toasted20 lettuce leaveswhole wheat bread for sanwiches,small slices
Directions
In a small bowl, combine the sour cream, mayo, lemon juice, salt and pepper. In a large bowl, combine the chicken, celery, mushrooms and peppers; stir in sour cream mixture until combined. Cover and refridgerate for at least 4 hours. Just before serving, stir in the bacon and pecans. Spoon 1/4 cup chicken salad onto each lettuce lined bread slice.
