Tuna Quinoa Salad with Goat Cheese

Ingredients
1 cucumber, chopped20 grape tomatoes, halved 2 cups cooked quinoa 1 15 oz can of chickpeas, drained3 oz goat cheese, crumbled2 cans tuna in oil, drained 4 tsp red wine vinegar2 tbsp olive oil 2 tsp dijon mustard .25 tsp kosher salt .25 tsp pepper, black 2 tsp lemon juice
Directions
Whisk together vinegar, oil, mustard, lemon juice, salt, and pepper to make dressing.
Combine cucumber, tomatoes, quinoa, chickpeas, and tuna in a medium bowl. Pour dressing over.
Divide into four containers, and top each serving with goat cheese.
