Porcupine Meatballs

Ingredients
3/4 lbs very lean ground beef1 Tbs minced onion1/2 cup short grain rice (uncooked)1 cup tomato juice (spicy if desired)1/2 cup water1 small can tomato sauce
Directions

Combine beef, onion and rice in a bowl and mix. Shape into 12 meatballs. Mix water & juice in pressure cooker and bring to a boil. Drop meatballs into cooker and close lid. Cook for 15 minutes with pressure gently rocking. Let pressure drop on its own accord. Remove lid carefully and serve over hot rice.

Makes 3 servings of 4 meatballs each.
