Condensed Coconut Milk

Ingredients
1 cup canned full fat coconut milk1 cup sugar½ tsp Kosher salt
Directions
Combine all the ingredients in a small, oven-safe pot and bring to a simmer.
Cook, stirring almost constantly, for 30 minutes.
Heat the oven to 250F.
Transfer the pot to the oven and bake another 1 ½ - 2 hours, stirring occasionally, until the liquid is thick and reduced. The colour may be slightly tan at this point but won’t turn dark like a caramel.
Transfer to a jar and store in the fridge.
