Balsamic Veggies and Pasta

2 tbsp olive oil1 large shallot = 4 tbsp chopped4 cloves garlic minced2 large portabello mushrooms1 cup shiitake mushrooms1 cup fresh broccoli or frozen1 tbsp balsamic vinegar10 oz cooked pasta
*Feel free to substitute any mushrooms if the portabello and shiitake are not available. Just make sure they are fresh and not canned.
Saute your veggies in the olive oil until they are wilted to the degree you like. Add the vinegar and season with salt and pepper. Add the veggie mixture to the top of the cooked pasta and serve while hot. I like adding a bit of soy parmesan to the top. Delicious and quick!
