Zucchini-Sausage Casserole

Ingredients
a pound of ground sausage- can use country sausage seasoned with sage, mild or hot. You can also use links and 'coin' them.2 medium zucchini. cut in half, twice. then cut down the length into 1/2 inch slices.large onion cut into half inch chunks.green pepper (about half makes a half cup-cut into strips and then cut strips in half.red pepper (optional)mozzarella cheese (8 oz is 2 cups)garlic/onion spaghetti sauce (or use your own favorite- 'chunky' fits right in with the texture of this dish)You can also use Morningstar Farms sausage crumbles and make this completely vegetarian.
Directions
Okay- this is super easy.
First- brown sausage in a large skillet.
Cut zucchini while you are doing this and throw it in the skillet as you are cutting to get it softened a bit. Stir in red pepper.
Cut onion and pepper, throw it in skillet if sausage is still browning. If not, put them in to a 9x13 baking dish (glass works nice if you have it).
Dump contents of skillet into baking dish.
Mix in sauce and mozzarella.
Bake at 350 degrees for about 45 minutes or until zucchini is tender.
Makes approximately 12- 1 cup servings.
