Hot or Cold Tomato Leek Soup

2 lb fresh tomato2T dried parsley 1 large or 2 medium leeks2T (heaping) minced garlic 1T olive oil1 cup tomato sauce 2T red wine1 tsp dried dill1.5 tsp paprika .25 tsp thyme .5 tsp salt .25 tsp black pepper
Puree 1.5 lb of tomato with the parsley.
Dice the remaining .5 lb tomato.
Chop the white and pale green parts of the leek into rings .25" wide. Make sure to rinse thoroughly.
Bring leek rings, minced garlic, olive oil and 4 cups of water to a boil in a large soup pot.
Once boiling, reduce heat to Low. Simmer for 5 minutes.
Add remaining ingredients (including all tomato) and simmer for 25-30 more minutes.
If serving hot, let stand for 30 minutes and then heat before serving.
