Chicken andouille with red beans and arugula

Ingredients
2 cup cooked small red Beans 1 cup, sliced Onions, raw .5 cup, sliced Peppers, sweet, red, fresh 2 clove Garlic 1 Tbsp Tomato Paste 1 cup Soup, chicken broth, canned, less/reduced sodium 1 tsp McCormick Old Bay Seasoning (by KATANMOL) 1 Bay Leaf .5 tsp Thyme, ground 1 tsp Lea & Perrin's Worchestershire Sauce (by CALEKU) 1 tbsp Canola Oil 3 Trader Joe's Chicken Andouille Sausage Trader Joe's, sliced 1 tspn Smoked Paprika4 cup Arugula
Directions
Heat canola oil in large frying pan
Add sausage onions and peppers to hot oil and saute until sausage has browned, add garlic and tomato paste and cook for an additional 2 minutes. Add all other ingredients except the Arugula. Simmer for 10 to 15 minutes, adding additional broth if need. When beans are soft but not mushy, add arugula and let cook until greens are limp. Serve with a side salad for a low carb meal or with rice if you prefer
