Cheesy Chicken Fritters

Ingredients
24 oz Tyson boneless, skinless chicken breast 2 large Egg, fresh, whole, raw .33 cup Mayonnaise, regular (mayo) 4 oz Mozzarella Cheese, whole milk 1 tsp Dill weed, dried .5 tsp Salt .125 tsp Pepper, black 6 tsp Amul Pure Ghee 14g/1 tbs=1 serv 1 tbsp Bob's Red Mill Coconut Flour (by BABYHUNT)
Directions
1. Dice chicken into 1/3 thick pieces and place in lg mixing bowl.
2. Add remaining batter ingredients and stir til combined. Cover with plastic and refrigerate at least 2 hours.
3. Heat non stick pan over med heat and add ghee. When heated chicken mixture in heaping Tbl. slightly flatten out. Saute uncovered 3-4 min on each side until outsides are golden brown and chicken is fully cooked.

Serving Size: Makes 16 to 18 fritters for 8 servings
