foil Steak Packet with Garlic Herb Butter

1 pound Red Potato (or you can substitute zucchini or squash for less carbs and calories)16 oz beef tenderloin cubed (or sirloin can also be used)2 medium Carrot sliced 1 Red Bell Pepper medium cubed1 Med. Green Bell Pepper cubed1/2 raw onion cubed1 tbsp Extra Virgin Olive Oil 1 tsp Parsley, dried .25 tsp Rosemary, dried .25 tsp Thyme, ground .50 stick Butter, unsalted 2 tsp Garlic - minced
Preheat oven to 350
1) In a medium sized bowl add the red potatoes, carrots, bell peppers, and red onion. Add salt and pepper and toss with olive oil.
2) Place four 18x12-inch pieces of heavy aluminum foil on counter. Evenly place vegetable mixture on each piece of foil. Top vegetables with steak.
3) To make the garlic herb butter: In a small bowl add the butter, parsley, garlic, rosemary, thyme, salt and pepper. Divide evenly and place on top of the steak. Double fold top and ends of each piece of foil, leaving space for steam to gather.
4) Place packets in the oven and bake 30 minutes or until veggies and meat are tender. (or, you can grill outside for 15 minutes or until steak is cooked through and veggies are tender). Carefully open packets and serve.
* I like to change it up sometimes by adding shrimp or sausage or different veggies (of course that will change the nutritional information as well)
