Amaranth Coconut Bars

Ingredients
.5 cup Amaranth Flour 4 oz coconut, unsweetened dried flakes (by STALEAN) Ground coursely .25 tsp Cardamom, ground 7 tbsp Maple Syrup
Directions
In a large pan, toast amaranth flour about 5 minutes until color changes, add coconut and cardamom, heat for another minute. Add maple syrup gradually and stir until sticky consistency. Press onto a baking sheet with fingers or spatula. Add a few sliced almonds to the top or more coconut. Cool, cut and eat.
