Ingredients

    1lb. potatoes, diced and peeled
    3 cloves garlic, minced
    1/2 c. onion, chopped
    1 tsp. ginger
    1/4 c. vegetable broth
    1 tsp. curry powder
    1 tbsp. coriander seeds
    1 tsp. turmeric
    1 tsp. lemon juice
    1 c. frozen peas
    16 wonton wrappers

Directions

Preheat oven to 350 degrees.

Saute potatoes, garlic, onion, and ginger in vegetable broth.

Cover and cook for 10 min. until potatoes cook down. Do not brown potatoes.

Add remaining ingredients except wontons. Cook until peas are cook through.

Divide mix evenly between the wrappers. Brush with water.

Bake until golden brown.

serving = 1 samosa

serves 16

    The taste is wonderful. What size wonton wrappers does this take? I needed a lot more than 16 for the amount of filling. - 7/17/09

    I'm sad b/c I followed recipe to a "T" , but found that my potatoes took 20+ minutes to boil down & that amt. of coriander seed was so strong that it overpowered the other spices. The idea of using won-ton wrapper is very clever and time-saving but it was not anywhere close to samosa dough. :S - 7/27/08
