Quick Savory Chicken with Orzo

Ingredients
4 chicken breast halves, sliced1 tsp. olive oilOlive oil spray1/2 c. orzo1.5 c. Kitchen Basics chicken stock1 c. frozen peas, thawed1 c. cherry tomatoesNature's Seasoning to taste
Directions
Slice chicken breasts into medalions. Season with Nature's Seasoning or salt & pepper plus any other spice you like.
Heat 1 teaspoon olive oil in sprayed non-stick pan and saute chicken for about 2 minutes. Turn over and add orzo, peas, tomatoes and stock. Bring to a boil. Reduce to simmer and cook for about 15 minutes. Check periodically to make sure orzo is not sticking. Add a little more stock if necessary.
