Yeast Rolls

Ingredients
1/2 oz. (2 pkts) dry yeast1 tsp sugar1/2 cup warm water1 1/2 cups skim milk1/4 tsp salt2 eggs, well beaten6-7 cups all purpose or bread flour
Directions
In a large bowl, sprinkle sugar over the yeast. Add lukewarm water and stir to disolve yeast. Set aside to rise (about 10 minutes). Meanwhile, combine milk, salt, and eggs. Add milk mixture to yeast. Sift and add flour one cup at a time, whisking to moisten flour after each cup. After adding 5 cups, turn dough onto a floured surface and need for 10-15 minutes, adding more flour as needed.

Spray bottom of bowl with cooking spray, return dough to bowl, cover loosely and let rise for about 1 hour. Punch down and kneed for about 5 minutes and let rise again. Divide dough into 24 pieces, roll each into a ball, and place on cookie sheets or muffin tins sprayed with cooking spray. Allow enough space for dough to double. Set aside for about and hour and then bake in 375 degree oven for about 15-20 minutes.

May be frozen and reheated in microwave.
