BLE WFPB Overnight Waffles

Ingredients
4 oz. dry quick Oatmeal (slightly less than 1-1/3 cups)1/2 tsp Salt 1/2 tsp Cinnamon, ground 2 oz Walnuts (about 1/2 cup) (or other nuts)1-1/3 cup Water2 tsp Bragg Organic Raw Apple Cider Vinegar 6 oz. fresh Banana, mashedFor topping:12 tbsp your choice of Nut or Seed Butter 18 oz. sliced Strawberries, or any other fruit, fresh, frozen or (drained) canned
Directions
Start night before. (Makes 4 servings.) Place in bowl or Pyrex quart size measuring cup:
4 oz quick oats
1/2 tsp salt
1/2 tsp cinnamon

In a blender place:
2 oz walnuts (or other nuts)
1-1/2 cup water.
Blend until smooth. Then pour into the oat mixture. Stir well and add:

2 tsp raw apple cider vinegar. (Must be raw!)

Let stand at room temperature overnight.

In the morning stir in
6 oz mashed banana.

Spray waffle iron with Pam and bake until steaming lessons or until done according to how your waffle iron works.

My waffle iron is an 8" by 8" 4-square size. This recipe makes 2 large waffles. I use 1-1/4 cup batter per large waffle.

Serving size is 1 half large (2-squares of the 4 squares) waffle. (Recipe makes about 2-1/2 cups batter, so a serving would be about 1/2 cup plus 2 tbsp so batter.)

Each waffle serving would be 1 grain serving, and 1/4 nut (protein) serving and 1/4 fruit serving.

To complete your breakfast, top each serving with 1-1/2 oz nut butter and 4-1/2 oz sliced strawberries or other fruit.
