Butterscotch Banana Cream Tapioca Pudding

Ingredients
1/4 cup packed brown sugar2 Tbsp all purpose flour2 Tbsp minute tapioca1/2 cup 1% milk1/2 cup water1 cup skim evaporated milk1/3 cup egg whites1 tsp butterscotch extract1 tsp vanilla extract2 bananas
Directions
In a large saucepan, combine the brown sugar, flour and tapioca. Stir in the milks. Bring mixture to boil over medium heat, stirring constantly until thickened. Remove from heat and stir in egg whites. Return to stove over low heat and cook for 2 minutes. Add the extracts and bananas. Remove from heat and chill until serving time.

Makes 4 (1/2 cup each) servings.
