Apple Cottage Pancakes

2 Medium eggs1 1/4 cups Quick Cooking Oats1 1/2 tsp Baking Powder1/2 cup Splenda1 medium Apple, peeled grated1 cup Fat Free Cottage Cheese2 Tblspn Applesauce (non-sweetened)1/2 tsp Cinnamon3/4 cup Orange Juice1 tsp Orange or Lemon Peel
Beat eggs and juice together, stir in oats, baking powder and Splenda until blended.
Fold in apple, orange or lemon peel, cottage cheese, applesauce and Cinnamon adding a little water if too thick.
Spray a non stick skillet and for each pancake drop in 2 Tblspn of mixture and cook until bubbles appear on surface, turn over and cook other side. Repeat until 12 pancakes are cooked.
Serve with sugar free Maple syrup and mixed berries.
