Speecy Spicy Meatloaf

Ingredients
1 pound Turkey, Ground turkey, 93% lean 0.5 cup Egg White (Naturegg Simply Egg Whites) or equivalent1 cup Dry navy beans 0.75 cup Dry Pinto Beans 1 large (7-1/4" to 8-1/2" long) Carrots, grated 1 cup Cauliflower, frozen, chopped 1.5 cup Birds Eye Pepper Stir Fry diced2 generous Tbs Spice Club Minced Garlic 1 large Onions, raw, minced 1 Tbs Mrs Dash Southwest Chipotle (or more to taste)
Directions
Pick over the dried beans and soak in water to cover them for at least 8 hours. Pour off soaking water and drain well.

In a large mixing bo wl add all ingredients and mix thoroughly. The mixture may now be refrigerated overnight or can be cooked off.

I use a crockpot liner to make cleanup easier. Transfer the mixture to this lined crockpot and smooth into a loaf shape. I cooked mine on low heat for 10 hours.

Do not expect this to come out in perfect slices as the finished loaf will not hold its shape like a regular meatloaf.
