Italian Tuna Salad

1/4 cup green beans, cut into 1/2 inch pieces5.5 oz can tuna in olive oil1 TBSP capers; rinsed & drained1 TBSP sun-dried tomatoes in olive oil, minced1 TBSP olives; minced (I used green & kalamata)1 whole scallion1 tomato; peeled, seeded and diced1 TBSP parsely or basil chopped1 TBSP olive oil2 TBSP lemon juicefreshly ground black peppera pinch of salt (optional)
Prepare an ice bath. Bring 2 cups water to a boil. Blanch the green beans for 1 minute or so. Drain and plunge to the ice bath. Drain and pat dry.
Drain tuna. Place in a bowl and add all other ingredients. Mix well. Season with salt & pepper. Chill before serving.
Serve on a bed of greens or with your favorite veggies or crackers.
