Quinoa Tabbouleh Salad

Ingredients
1.5 cup Quinoa 3 cup Water, tap 1 cup Tomatoes - sm cherry tomatoes quartered1 cup Cucumber Seedless Long English, diced2 cup Bell peppers (orange & red) diced1/2 cup Parsley diced1/4 cup Fresh Mint, diced2 Garlic cloves, diced5 tbsp Lemon juice 3 tbsp Extra Virgin Olive Oil salt and pepper
Directions
Add quinoa to water, cover and bring to a boil. Reduce heat and simmer 15 minutes until water is gone. Let sit for 5 minutes, fluff with a fork.
Add quinoa to a large bowl along with tomatoes, cumcumber, red and orange pepper, parsley, mint, garlic, lemon juice, olive oil, salt & pepper to taste. Toss everything together and serve.
