Carrot Soup with Ginger

Ingredients
907 grams Carrots, raw 2 oz Ginger, Crystallized 1 tbsp Butter, unsalted 1 tbsp Crisco Pure Vegetable Oil 1 cup, chopped Onions, raw 1.5 cup Carrot juice, canned 4 cup (8 fl oz) Water, tap
Directions
sautee onions, ginger, butter and oil for 7 minutes;
add water, 3/4 c carrot juice and carrots and simmer, covered 20 minutes
add remaining carrot juice
