Loaded cauliflower casserole

Ingredients
3 cup (1" pieces) Cauliflower, cooked 1 cup Sour Cream 8 oz Cheese, Boar's Head Vermont Cheddar Cheese (Yellow & White) 3 medium slices, cooked (raw pro Bacon, pork, microwaved
Directions
Cut cauliflower into 1" pieces. Boil until tender. Mash cauliflower. Add sour cream and butter. Season with a pinch of salt. Place in baking dish. Cover with cheese and sprinkle with bacon. Bake at 350 for 20 mins until cheese melted and bubbly. Sprinkle with chopped green onions.
