Mexican Tofu Scramble

Ingredients
0.5 block Tofu, firm8.0 large Egg, fresh, whole, raw6.0 serving Red Potato0.75 cup stir fry veg,frozen,Great Value brand0.5 cup, shredded Cheddar Cheese2.0 pat (1" sq, 1/3" high) Butter, unsalted2.0 tbsp Extra Virgin Olive Oil
Directions
Dice potatoes and combine with stir fry peppers in skillet after preheating with one tbsp oil and one pat butter. Cook until potatoes are softened and golden brown. Meanwhile, place tofu in mixing bowl and season with 1/4 cup Worcestershire sauce. Break tofu apart into crumbs. Let soak. Scramble eggs in mixing bowl, set aside. When potato mixture is cooked, add eggs and tofu and mix together. Add the rest of the oil and butter. Cook thoroughly. Season with cumin, chili pepper and Tony Chachero's. Top with cheese.Serve hot. Add sour cream or cholula for extra flavor.
