Zucchini-Crust Quiche

3.5 cup, sliced Zucchini 6 serving 1 Egg- large, fresh 8 oz Owens Maple Sausage 3.1 oz Goat Cheese, Laura Chenel's Chevre (by YOURJONES) .5 oz Parmesan Cheese, hard 2.3 serving Baby Bella Mushrooms (3 oz) 5.3 tbsp Heavy Whipping Cream
Preheat oven to 400. Shred zucchini, squeeze out water. Add to bowl with 1 egg, 2 tbsp. parmesan, salt, pepper, and any other seasonings you want. Press mixture into 9" deep dish pie pan or 10" pie pan. Bake 25 minutes, until edges are golden brown. While baking, combine 5 eggs, 1 oz mascarpone, 1/3 c heavy whipping cream, 2/3 c water, and whatever seasonings you want in bowl. Remove pie plate from oven. Sprinkle/spread cheese, mushrooms, sausage into crust. Pour egg mixture over top. Bake a 350 for 35-45 minutes until center is set and beginning to turn golden brown.
