Chili Lime Chicken

Ingredients
2 lbs chicken thighs4 tbsp unsalted butter8 oz of thinly sliced onion2 packets Goya Sazon Con Culantro y Achiote4 tbsp Chili powder1 tbsp kosher salt1/2 tbsp fresh ground black pepper1/4 cup lime juice (or 3-4 limes juiced)
Directions
Melt butter in a dutch oven over medium heat. Add sliced onions and caramelize the onions in the butter. Add the Goya Sazon Culantro y Achiote about halfway through caramelizing the onions. Add the chicken thighs to the pan. Add chili powder, salt, and pepper covering the chicken. Cover and cook for about 5-7 minutes. Flip the chicken and stir and add in the lime juice. Stir ingredients together. Cover and cook another 5-7 minutes or until chicken thighs are cooked through. Remove chicken thighs from pain and stir up remainder in pan and let cook on medium low heat while you cut up the chicken. Cut the chicken into bite sized pieces (or you can shred) and put it back in the pan. Stir and allow to cook over medium low heat for just a few minutes more uncovered (basically until sauce forms). Serve.
