Mediterranean Wraps

Ingredients
Sandwich and Stuffing: 2 whole wheat pitas4 romaine lettuce leafs8 thin slices onion8 thin slices tomato8 thin slices of cucumber 8 large pitted black olives, slicedSuper Easy Taziki:1/2 lemon1/4 cups plain nonfat yogurt1/3 of a medium cucumber, peeled and gratedsalt and pepper to tasteHummus:1/2 lemon1 cup chickpeas, washed and drained2 oz tahini2 cloves garlicabout 10 sprigs of parsleysalt and pepper to taste
Directions
Slice pitas in half and toast all four pieces in oven or toaster.

While they are toasting, squeeze half a lemon into a small bowl. Mix in all ingredients of taziki recipe and set aside.

In a blender, squeeze remainder of lemon and mix in all ingredients for hummus recipe. Blend until a bit thinner than peanut butter.

Spread hummus inside pita pockets, add all veggies and top with taziki and Serve.

Optional: Try with feta or falafel.
