Nonfat Smoky Pinto Beans

Ingredients
1 pound bag dried pinto beans1 medium onion, chopped5 cloves garlic, minced1 chipotle pepper1 Tablespoon smoked paprika2 teaspoons ground cuminSalt and pepper to taste10 cup (8 fl oz) Water, tap (add more or less depending on consistency you desire)Cilantro, chopped (optional)
Directions
Place pinto beans, onion, garlic, chipotle pepper and spices into crockpot. Add water to crockpot, covering beans by at least 2 inches. More water can be added if you want to make a soup. Cook on high for 6 hours or low for 12 hours. Beans are ready when they are soft. Garnish with chopped cilantro.
