Bean Burgers

1 large Onion, finely chopped2 clove Garlic, minced 1/2 sweet red pepper, finely chopped1 rib celery, finely chopped1 medium Carrot, shredded1 tsp Chili powder 1 tsp ground cumin1 (15 oz) can pinto beans, drained and rinsed 1 (15 oz) can black beans, drained and rinsed1.5 cup quck oats2 Tbs Dijon Mustard2 tbsp Reduced Sodium Soy Sauce 1 tbsp Ketchup1/4 tsp black pepper
In large, non-stick skillet, sprayed with non-stick spray, cook onions and garlic in oil until tender. Stir in the carrot, red pepper, celery, chili powder and cumin, cook 2-3 minutes longer or until carrot and celery are tender. Remove from heat.
In large bowl, mash black beans and pinto beans. Stir in oats. Add mustard, ketchup, soy sauce pepper, and carrot mixture. Shape into 8 patties.
Heat grill to medium, spray grill rack, grill burgers covered, 4-5 minutes on each side. Serve
