Lentil blue cheese salad

Ingredients
114 grams cooked, chopped bacon, well drained100 grams crumbled blue cheese530 grams drained, canned lentils, rinsed2 small chooped carrots1 big chopped shallot or small onion3 TBL chopped chives1 TBLSP oil1 TBLSP water1TBLSP balsamic vinegar1 TBLSP wine vinegarsalt and pepper to taste1 tsp dijon mustard
Directions
Makes 4 big servings
Combine all ingredients and toss gently.
Combine all liquid ingredients and emlusify with a fork to make a thin dressing. Toss together and chill
