Easy Taco Salad

Ingredients
1/2 lb ground chuck (or leaner beef)**1 can black beans3/4 cup water1 packet taco seasoning8 cups shredded romaine lettuceTortilla chipsSalsaSour CreamShredded cheddar cheeseOptional jalapenos**For vegetarian or lower fat variety substitute a cup of beans for the burger - delicious!
Directions
Brown ground beef in large 10" skillet. Add black beans to the cooked beef with 3/4 cup of water and mix in the packet of taco seasoning. Let simmer on medium for about 10 minutes. Using large bowls add about 2 cups of lettuce to each bowl and top with tortilla chips. Once burger/bean mixture has thickened top the tortilla chips with 1/4 the mixture. Add some shredded cheese and top with the salsa and a tablespoon of sour cream.

Makes 4 nice sized taco salads. Very filling!!
The mixture can be refrigerated and reheats nicely.
