Low Carb Tabouli with Quinoa

Ingredients
5 cups chopped Parsley1 cup chopped Fresh Mint Leaves2 cups diced Cherry Tomatos 1/2 cup finely chopped red onions 2/3 cup cooked quinoa 1/2 cup Extra Virgin Olive Oil 1/2 cup lemon Juice I used two bunches of flat Italian parsley leaves, coarsely chopped and as much mint as I could get One 10.5 oz package of grape tomatoes. I cooked 1/3 cup quinoa, which about doubles in volume.
Directions
Mix chopped tomatos, red onions, parsley, mint, and 2/3 cup cooked quinoa. Add salt and 1/2 tsp cumin, mix well. Mix lemon juice and olive oil in a measuring cup and pour over vegetable mixture.
