Lobio (Georgian kidney beans)

1/2 onion, minced1 tbsp Olive Oil4 cloves of garlic, minced2 cans kidney beans, drained and rinsed1/4 tsp dried coriander1 tsp dried blue fenugreek3 bay leaves1 bunch cilantro, mincedSalt and pepper to taste
Saute the onion in olive oil until starting to brown. Add the garlic, and cook until fragrant. Add the beans, 1 c water, coriander, fenugreek, bay leaves, and a pinch of salt, and simmer, covered, for ~20 minutes. Remove the bay leaves and stir in the cilantro. Use a potato masher to mash the beans until they are chunky and starting to get smooth. Stir in salt and pepper to taste.
