"special" omelette

Ingredients
1/2 cup egg beaters w/yolk (regular egg beaters can be used to make it even lower in caloires and fat.)1/4 cup diced red peppers1/4 cup diced mushrooms1 slice turkety bacon1 slice fat free cheesesalt and pepper to taste
Directions
Preheat 10" omelette pan on medium heat.
Dice mushrooms and pepper and sautee untill soft, and set aside.
While vegetables are cooking, microwave turkey bacon for 1 minute or until crispy. Crumble and set aside.
In pan used to cook vegetables, cook the egg beaters until almost cooked through, lifting the edges to let uncooked egg run underneath.
Top with sauteed veggies, bacon, and cheese, and fold over.
Let cheese melt, then enjoy!
