Ingredients
1 tbsp olive oil1 onion (chopped)2 garlic cloves2 (6 oz.) boneless skinless chicken breasts1 (10 oz.) pkg frozen spinach2 oz. reduced-fat cream cheese3 cups lower-sodium chicken brothsalt and pepper to taste
Directions
cook chopped onion until soft.
Add other ingredients.
simmer for 5 minutes
serve, yum!

    Great flavor, a bit thin, but I liked it and so did my daughter, a picky eater. Very easy and quick. If I weren't watching my carbs I'd add a bit of cooked diced potato to thicken it. Used fresh spinach and that worked well. - 11/14/13

    This is SO good! The second time I made it, I didn't have any spinach, but I had a package of chopped broccoli, so I used that and it was YUMMY. I also added a bit of Curry powder to it and that made it very "exotic" tasing! I've added this to my "favorite recipe" list! Thanks for sharing. - 8/20/11
