This is SO good! The second time I made it, I didn't have any spinach, but I had a package of chopped broccoli, so I used that and it was YUMMY. I also added a bit of Curry powder to it and that made it very "exotic" tasing! I've added this to my "favorite recipe" list! Thanks for sharing. - 8/20/11
